For the final episode of our current Masterclass series on ingredients we travelled to China and France to discuss osmanthus and clary sage. I was joined once again by Remi Pulverail for a conversation which addressed the curious way in which osmanthus is mixed with salt in order to give it the desired scent profile, as well as the similarities between lavender and clary sage, and the thorny subject of the many supposed ambergris substitutes that are derived from the latter. The Masterclass series will hopefully return in some form before too long, but for now, I’d like to thank Remi once again for giving up so much of his time to share his knowledge and insights with all of us.
