First came the sweet smile of mandarin oil, and then the tortured, complex, opaque personality of iris. That was the order of events in my most recent Masterclass with Remi Pulverail, over on YouTube, during which we contrasted the relatively trouble-free process of obtaining the citrus oil with the far more complicated work that goes into creating iris butter.
