Our taste buds were well looked after in the latest episode of my Masterclass series: the two ingredients under Remi Pulvérail’s spotlight were cocoa and vanilla. The complexity of global supply chains has been a running theme in this series so far, but the topic was especially relevant in this episode, particularly in relation to vanilla, with its punishing, time-consuming production process.
